Pancake lovers, this is your temple!
The Collation is above all a family story. The story of a sister and a brother, Léa and Emilien Cerisier, brought together by the same love of gastronomy and their grandmother Pierrette to whom they wanted to pay homage by revisiting the recipes of their childhood.
They seem to have found the magic recipe for a successful restaurant: an open kitchen, pancakes that come out in Towers, strong values such as sharing and proximity, without forgetting a good dose of gluttony with ever more original recipes. To adapt to seasonal local products, the menu changes every one and a half months, a guarantee of flavor and freshness! Everything is homemade and prepared on site. Something to enjoy without feeling guilty!
They offer their bistro menu to devour from Monday to Friday from 11:30 a.m. to 2:30 p.m. and the 100% pancake brunch every day of the week.
Some examples of recipes to make your mouth water:
- The American Pancake Dream: An American-inspired recipe composed of 2 poppy seed pancakes, mixed greens, herbed potato pancakes, sliced red cabbage, tomatoes, red onions and mimolette cream with the possibility of making it even more delicious with an additional fried egg and grilled pancetta.
- Le Vegg’Italie: An Italian-inspired recipe: 2 pancakes with pesto, arugula, straciatella cheese, dried tomatoes, almonds, pomegranates and herb vinaigrette.
- Taco’llations: A Mexican-inspired recipe: 3 pancakes topped with cream cheese, sliced red cabbage, tomatoes, red onions, corn, shredded chicken marinated in sweet pepper and paprika, coriander, lime, onion pickles, avocado cream , nachos and mimolette cream. Tabasco available!
- The Pavlova Pancake: A New Zealand-inspired recipe, composed of a pancake, meringue, whipped cream, red fruit coulis and seasonal red fruits.
