      La Toque Cuivrée

      At the beginning of the 20th century, the canelé resurfaced, with the recipe being taken over and improved. Over time, this pastry became the emblem of the city of Bordeaux.

       

      La Toque Cuivrée played a crucial role in the development of this traditional pastry. It took exceptional expertise and years of experimentation to create the perfect canelé. 

       

      For over 30 years, our establishment has been dedicated to the production and sale of this delicacy, the canelé. A delicious, unmissable speciality of Bordeaux cuisine. By all accounts, our canelés are the best in Bordeaux!


      The origins of canelé : 

      Its origins go back to the nuns of the Annonciades convent, nestling behind the church of Sainte Eulalie. They collected the wheat from the sacks torn from the boats in the port, as well as the egg yolks from the quays of Chartrons, where the wine was transported, and the egg whites were used to clarify the wine. Rum and vanilla were naturally present on these quays, with Bordeaux a key player in their export. The nuns seized this opportunity to perfect their recipe for 'canelats', now known as 'canelés'.

       

      Unfortunately, the canelats disappeared in 1970 when the nuns were expelled from the convent.

      How to spell it: canelé or cannelé?

      Canelé originated in Bordeaux, at a time when Gascon was still the language traditionally spoken. Until the 20ᵉ century, the term "Canelat" was used to describe this pastry, crispy on the outside and soft on the inside. To this day, this spelling with a single occurrence of the "n" has been retained. So we write "canelé" and not "cannelé"! 


      Our tips for preserving your canelés!

      To prolong the freshness of our pastries, it is essential to keep canelés in the fridge for a maximum of three days. To preserve their crunchiness, it's also a good idea to bake them a little longer. To do this, reheat the canelés in the oven at 220°C for about three minutes.

    Boutique specializing in cannelés. Normally I’m not a big fan, but this place changed my mind. They were delicious! A nice midday treat if you just so happen to be passing by via bike.
