      The canelé, a delicious little pastry with a rum and vanilla flavour, has a crisp centre and a soft, chewy centre that reveals itself once you've bitten into it! 

       We also invite you to discover our other canelé-based treats, such as the Elixir aux canelés, the verrine de canelé, our caramels with canelé chips, and our canelé spread!


      La Toque Cuivrée

      At the beginning of the XXᵉ century, the canelé resurfaced, with the recipe being taken over and improved. Over time, this pastry became the emblem of the city of Bordeaux.

       La Toque Cuivrée played a crucial role in the development of this traditional pastry. It took exceptional expertise and years of experimentation to create the perfect canelé. 

      For over 30 years, our establishment has been dedicated to the production and sale of this delicacy, the canelé. A delicious, unmissable speciality of Bordeaux cuisine. By all accounts, our canelés are the best in Bordeaux!


      The history of the canelé

      It was in Bordeaux that the crunchy little pastry with the flavour of rum and vanilla was born. It was first known as "canelat", from the Gascon language, which was still the language traditionally spoken until the 20ᵉ century. In fact, this is the spelling that will be retained to this day.

      It was in the hands of the nuns of the Annonciades convent, located behind the church of Saint Eulalie, that the canelé found its roots. The essential ingredients, wheat and egg yolks, were collected from the docks where the boats docked. Rum and vanilla were found naturally on the quays, thanks to Bordeaux's role in their export, and they used them to improve their recipe.

      Our tips for even tastier canelés!

      To keep your canelés as long as possible, it's essential to keep them in the fridge for a maximum of three days. To preserve their crispiness, it is also advisable to bake them a little longer. To do this, put the canelés in the oven at 220°C for about three minutes.

    One of the cheaper canele places in the city but the quality does not drop off too much. They have three different sizes of Caneles: small, medium and large. Sometimes there is a line but this goes quite quickly. Employees were nice, ordering was easy, overall solid experience in getting caneles.

    Best canele I have had. The inside is soft and the outside hss a nice sweet and cinammon flavor covering. You got to try it. The staff is very friendly, rhey sale them in different sizes. Go for the large one, so you can really enoy its delicious flavor.

    Cannelés are a traditional dessert found only in Bordeaux, it’s a small cake flavored with Ruhm. the best cannelés were the ones I tasted at La toque Cuivrée.
