The Place Saint Project
Place Saint-Projet, located in the historic district of Bordeaux, takes its name from a bishop who died in 674. Formerly, this place housed a church surrounded by a cemetery, some architectural remains of which have been preserved in the surrounding homes.
Thus, we can discern the silhouette of a bell tower which, today, is no longer in use, the walls of the old church and the cross of Saint-Projet, from the cemetery, dating from the 14th century. In 1715, a fountain was added to the architectural ensemble.
Fluted or fluted?
The origin of its name goes back to Gascon, the language historically spoken in Bordeaux until the 20th century, where we found the term "Canelat" with a single occurrence of the "n", a spelling that we retained until These days. It is therefore not “cannelé” but “canelé”!
The origin of Bordeaux canelé
It was the nuns of the Annonciades convent, established behind the church of Sainte Eulalie, who were responsible for their making. They collected wheat from the port, fallen from the holds of boats or from torn bags, and obtained egg yolks from the wine cellars of the Quai des Chartrons where the whites were used to clarify the wine.
At the time, Bordeaux was an important trading port making it easy to obtain rum and vanilla from the islands. These nuns enriched their recipe by adding these ingredients to enhance the flavor of the “canelats”, today called “canelés”.
Unfortunately, in 1790, they were expelled from their convent, leading to the disappearance of the canelats!
The Copper Toque
The Toque Cuivrée played a key role in the rise of this traditional Bordeaux cake. Years of research and unique know-how were necessary to achieve a perfect canelé. Today, the small pastry shop has become an emblem of Bordeaux.

To optimize the conservation of canelés, it is essential to keep them cool for a maximum of three days. In order to preserve their crispness , it is also recommended to carry out additional cooking. To do this, put the canelés in the oven at 220°C for around three minutes.
