Aymeric graduated from an engineering school, after his studies, he had many projects in mind, but first wanted to train as a buyer of seafood. In Paris, he works in a major food wholesaler brand. While traveling in Bordeaux, he crosses paths with Yann. Their common Breton origins bring them together and these few years working for others seem to them more than sufficient to finally start their own business: they launch in Bordeaux, the nets of Oh! The two friends start from an observation, frequently observable in cities which do not have the immediate proximity of the coast: it is difficult to find fish caught locally, in season and ultra fresh in Bordeaux. Fish from the Atlantic and Gironde

It is not only in Norway, Iceland or Madagascar that we find wonders of the sea! Aymeric and Yann know it: the fish-rich waters of the Atlantic, from La Rochelle to the Basque Country, are a treasure. Oh ! Responsible fishing means choosing what you catch, with a line or small nets. The seabed is preserved, we avoid moving them, disturbing species that we do not want to fish: we will select the catches, no collateral damage! Responsible fishing also means respecting the seasonality of the fish. Depending on the species, there is a period of reproduction and a size of the catch to be honored, to give fish populations a chance to regenerate and ensure the availability of the resource.

Baskets of fresh fish to discover new flavors

Do you know the principle of AMAP? Each week, you receive a basket of vegetables and other products, but you do not choose the composition, it is according to the season and the harvest. Oh ! Matelot was inspired by this process, to offer baskets (which can be ordered with a frequency determined in advance, or piecemeal) variable according to the fishing. You have the assurance of perfect traceability and incomparable freshness, with a minimum weight of 1 kilo of products (this represents a meal for 4 or 2 meals for 2 people), but it's a surprise on the content !

The baskets consist, for example, of a large part of first-rate fish, such as sole or sea bass, but also of lesser known or valued species, to be rediscovered because they are absolutely delicious! Aymeric is convinced of the importance of enhancing the value of local species, which are sometimes underestimated or unknown. The gurnard, the pout, the old woman or the mullet are species said to be not very noble. Why? Because they are fragile fish, incidental or accidental fishing, which are often caught collaterally by targeting other species. It is also the mission of Oh! Matelot, than to open the horizons of consumers, by making them discover new flavors!

In the baskets, we also sometimes find seafood, shellfish, caught on foot while respecting the regulatory size. Soon, we will be able to taste freshwater species, such as the eel or the catfish from the estuary. Well prepared, it's delicious!

For delivery, Yann and Aymeric will meet you in Bordeaux at the relay points with their cargo bikes or their small trucks. Deliveries take place from Tuesday to Saturday for individuals. So far it's about 100 baskets per week, but they are convinced that their ethical and local business will swim quickly to success! Eating good fish is not that expensive and with Oh! Matelot, we respect the proteins of the sea, which we rediscover at their true value.
