What are some typical Bordeaux dishes to eat?

From starters and main courses to desserts, you can create an entire menu with typical Bordeaux recipes. To whet your appetite, here are a few specialties you absolutely must try:

Porcini mushrooms, Bordelaise style

This dish is made with large brown mushrooms that can be picked from the end of September. Their subtle nutty flavor is revealed when they are sautéed, a taste that pairs beautifully with the buttery parsley and garlic sauce. Quick and delicious, this typical Bordeaux recipe can be enjoyed on its own or as an accompaniment to a meat dish.

Lamprey à la Bordelaise

It's not the most elegant recipe, as it requires bleeding the fish alive. That said, it's a staple of southwestern cuisine, calling for red wine to simmer the lamprey for several days. Caught between February and March in the Garonne River, the fish can be flavored with cloves, garlic, and spices.

Grilled shad

Here is a typical Bordeaux recipe cooked in the spring when barbecues and planchas are out. Grilled on vine shoots, the shad caught in the Gironde is accompanied by a green sauce made with chives, parsley and chervil, and is most often enjoyed with a glass of red wine.

The ribeye steak with its Bordelaise sauce

Meat lovers will relish this beautiful piece of meat grilled over a bed of embers. This technique stems from an old tradition where winemakers used the wood from old barrels to cook meat. Accompanied by a shallot sauce cooked with red wine, it is delicious and infused with the aroma of bone marrow.

Entrecote

Another delicacy to enjoy in Gironde is foie gras, a true institution of the southwest.

The crépinette

This recipe, typical of Bordeaux, is similar to sausage, but in the form of a small ball of minced meat encased in caul fat. Most often prepared during the holiday season, crépinette is a delicacy that can be flavored with truffle, parsley, or Armagnac. The more adventurous can try the true traditional recipe where the meat is mixed with Bordeaux oysters, accompanied by a glass of white wine.

Rack of lamb from Pauillac

The slow-cooked meat melts in your mouth, a true delight prepared with a bouquet garni and seasonal vegetables. The lamb in this recipe is now raised and certified with the Label Rouge quality mark, which wasn't the case in the past when sheep grazed at the foot of the vineyards. This story is the origin of Pauillac lamb, a premium product to be enjoyed without restraint.

The canelé and its gourmet coffee

Who hasn't heard of the famous Bordeaux canelé ? This delicious sweet treat, made with milk, eggs, rum, and vanilla, is a must-have for dessert or an afternoon snack, especially when enjoyed with coffee. It's also often the centerpiece of a gourmet coffee experience, thanks to its perfectly balanced flavors.

Bordeaux canelé

The mias or the millas

This flan-like dessert has quite a history. Made in the 16th century from millet flour, it evolved over the years to be made with corn flour. At the time, this type of flan was eaten sweet or savory as an accompaniment to dishes. The recipe has since evolved into a true delicacy, in which rum is an essential ingredient.
