Under the direction of chef Yoann Amado, formerly of Éric Fréchon's Michelin-starred brigade, the Cercle Guiraud menu revisits the great classics of French gastronomy with freshness, audacity and modernity.
Between elegance and simplicity, the cuisine highlights local seasonal products – vegetables from the South West, truffles, foie gras, caviar, seafood and exceptional meats – enhanced by precise cooking and original flavor combinations.
Each dish is an invitation to (re)discover the culinary richness of the region, with the French art of living as a backdrop.

The Cercle Guiraud offers several packages to suit all tastes:
- Sauternes Menu (lunch only): Starter + Main Course or Main Course + Dessert;
- Guiraud Menu : Starter + Main Course + Dessert;
- Grand Cercle Menu : Five dishes chosen by the Chef for an immersive experience;
- Menu : Choice of menu according to your preferences.
All menus are designed to showcase subtle food and wine pairings, with particular emphasis on Sauternes wines.
Sauternes as a common thread
Foie gras, hare à la royale, sea bream with ginger or even grilled pigeon with vine shoots... The cuisine of Cercle Guiraud naturally pairs with the finest expressions of the local vineyard.
Sauternes, long reserved for dessert, finds its rightful place at the table here thanks to surprising and tasty combinations. Sommelier Denis Verneau, Meilleur Ouvrier de France, has selected French vintages from estates committed to sustainable viticulture, with a large place given to Bordeaux and more confidential labels.
Trilogies and great vintages of Château Guiraud
Created by Frédéric Flament, Director of Catering, the “Trilogies du Château Guiraud” allow you to taste the three flagship wines of the property (G de Château Guiraud (dry white) and the two Sauternes) in perfect harmony with the dishes.
With the “ If Time Were Told to Me” experience, lovers of fine wines can also discover prestigious vintages of Château Guiraud, 1st Grand Cru Classé in 1855.
In the fall, let yourself be surprised by a royal hare enhanced by a Sauternes 2003.
In summer, enjoy a squab with raspberry devil sauce accompanied by a 2016 Sauternes. In each season, wine becomes the natural extension of cuisine.

The Cercle Guiraud showcases local artisans and producers. Their expertise, love, and passion for excellence drive and inspire the restaurant team every day. This short-circuit sourcing also helps reduce the restaurant's carbon footprint.
Recycled waste
Aware of the role to be played in promoting sustainable development, Le Cercle Guiraud is meticulously committed to sorting and recycling waste. Waste of plant origin, such as vegetable peelings or leftovers from preparation, is not considered waste but a valuable resource: it is systematically collected and transformed into compost.
This compost is then used to enrich the soil of Château Guiraud's organic vegetable garden. This practice reduces waste and improves soil fertility naturally, without the use of chemical fertilizers. The vegetable garden thus nourished produces a variety of organic vegetables, herbs, and spices of exceptional freshness and quality, which the Chef and his teams use to create the dishes of the moment.
This circular approach —from waste to compost, from compost to vegetable garden, and from vegetable garden to plate—perfectly illustrates Cercle Guiraud's commitment to responsible and sustainable gastronomy. It not only reduces the restaurant's ecological footprint, but also offers an authentic culinary experience, deeply rooted in its local terroir.
