More than just a shack, Chez Mimi is a tribute. The name pays homage to Mimi, his friend's great-aunt, who made the traditional Gujan-Mestras oyster baskets. The walls are adorned with vintage photographs of the Arcachon Basin's pinasse boats, and everything, from the decor to the gestures, exudes the Gujan-Mestras oyster-farming tradition. Cyril works directly with the best local artisans : daily bread from the Michelin-starred Boulangerie Le Bellis, Entre-Deux-Mers wine from Château Nardique La Gravière, and limes accompanied by homemade vinegars and condiments made by Cyril himself.
