In the colder months, they take center stage with the more briny oysters from Cap-Ferret, which reveal the delicate flavors of the Basin's open waters. In summer, connoisseurs can also enjoy the Quatre Saisons, a non-milky, sterile triploid oyster, ideal for those who prefer to avoid oysters during their breeding season. Three to five years of patience and care are required to mature the spat and impart the unique flavor of the Arcachon Basin. All their oysters are produced using traditional, environmentally friendly methods.
