Guillaume was born on the local waterfront. He started his first job packing oysters at the age of 16 in the port of Andernos. His great-grandfather was an oyster farmer in Andernos. He bought his farm in 2009 after working as an oyster farmer for a few years with the previous owner. Sylvine, his partner, joined him in the adventure in 2012. The oysters are 100% FROM THE WATERFRONT. They are born on the waterfront and raised for 3 years, then served in the tasting area by the water.
They produce a plump and well-filled oyster. They are raised in the pond and then, at the end of the cycle, fattened at the Banc d'Arguin.
They chose to sell their produce on-site, grass-fed, at their farm: oysters to enjoy on the terrace or oysters to take away. At Christmas, they ship the oysters all over France.
Their daughter Elisa is currently training to become an oyster farmer herself. They hope to pass on their passion for the profession to her and perhaps, who knows, the continuation of the CHEZ GUILLAUME cabin to become CHEZ GUILLAUME ET FILLE.
