In the oyster-farming village of L'Herbe, in Lège-Cap-Ferret, Guillaume and Sylvine welcome you right on the water's edge for an authentic, briny experience overlooking the Arcachon Bay. For over 20 years, Guillaume has lived his passion for oyster farming. In 2009, the couple took over a farm in the heart of the Bay and transformed this traditional oyster shack into a must-visit destination for all seafood lovers. Here, the horizon shimmers, the breeze is salty, and each oyster tells the story of an exceptional marine terroir.

At Guillaume's, oysters are raised with passion directly on the Arcachon Bay.

From start to finish, Guillaume and Sylvine carefully cultivate their oysters in the oyster beds of the Arcachon Basin, offering you impeccable quality through direct sales. Two types of oyster maturation are available to suit different tastes: Cap Ferret oysters, plump and briny, and Banc d'Arguin oysters, matured in the open sea for a more subtle, slightly nutty flavor. Available in sizes No. 2, No. 3, and No. 4, starting at €7.50 per dozen, they can be enjoyed on-site or taken home to extend the pleasure.

In the oyster shack overlooking the water, settle in for a generous tasting accompanied by organic shrimp, whelks, artisanal pâtés, and wines from local producers—a moment of sharing in the true spirit of the Arcachon Basin. The shack is open from June to September, 11:30 a.m. to 10:00 p.m., as well as in April and late October. For those unable to travel, delivery is available in Bordeaux and its metropolitan area on Thursdays and Fridays, and shipping throughout France is available from November to February. A free oyster knife is offered with orders of 5 dozen or more, and shipping is free with orders of 50 dozen or more.
