      The Toque Cuivrée

      The canelé resurfaced at the beginning of the 20th century when a group of pastry chefs decided to update and improve the recipe, making this little pastry a true symbol of the city of Bordeaux. 

       

      La Toque Cuivrée played a crucial role in the comeback of this traditional Bordeaux cake. After years of research to create the perfect canelé, our company now specialises in making and selling the famous canelés de Bordeaux, a sweet must-have in Bordeaux cuisine. The locals call them "the best canelés in Bordeaux"! 


      The history of the canelé de Bordeaux 

      The history of the canelé de Bordeaux goes back to the time of Gascon, the traditional language spoken in Bordeaux until the 20th century. During this period, the term "Canelat" was frequently used, with only one occurrence of the "n". We have maintained this spelling right up to the present day.


      The creation of these delicious little cakes was the work of the nuns from the Annonciades convent, established behind the church of Sainte Eulalie. They collected wheat from the port, either from the holds of ships or from torn sacks, and obtained egg yolks from the wine cellars on the Quai des Chartrons, where the whites were used to clarify the wine.


      At the time, Bordeaux played a central role as a trading port, facilitating the import of rum and vanilla. The nuns decided to add these to enrich their recipe and enhance the flavour of the 'canelats', which later became known as 'canelés'. But in 1790, after they were expelled from the convent, the canelats disappeared...


      Place Paul Doumer in Bordeaux

      The Place Paul Doumer, named after the 14th President of the French Republic, is located in the lively heart of the Chartrons district. It sits at the intersection of the Cours Portal, Verdun and Edouard de Fayolle, playing a central role by connecting the main thoroughfares and shopping streets such as the Cours Saint Louis. The Paul Doumer tram stop (Line C) makes access to the square much easier. The square was recently renovated in 2005 during work on the tramway, and now offers a variety of shops, bars and central amenities such as fountains and a Vcub station, creating a friendly and attractive atmosphere.

       

      Our tips for even tastier canelés!

      To prolong the freshness and deliciousness of our pastries, it's essential to keep the canelés in the fridge for a maximum of three days. To preserve their crunchiness, we also recommend that you bake them additionally. To do this, reheat the canelés in the oven at 220°C for around three minutes.

    Very nice! Too bad can't last long to bring home as gift. 40 cents for the small one and 50 cents for the medium one.

    I have already tried other Cannelés made from other bakeries but I have to admit they weren't that good, slightly cripsy outside and a world of softness inside, with an addictive taste of rhum ... Yummy, yummy !

    Amazing (and affordable) caneles, and the cashier was very nice as well! Too bad there is no seating area but very practical for take away :)
