      The Copper Toque

      La Toque Cuivrée played a crucial role in the revival of this traditional Bordeaux pastry. It took years of research and exceptional know-how to create a perfect canelé.

      It wasn't until the early 20th century that pastry enthusiasts perfected the recipe. Thus, this little sweet treat has become a true symbol of the city.

      La Toque Cuivrée is dedicated to the making and sale of the famous Bordeaux canelés, unanimously praised by customers as being the best Bordeaux canelés!

      The origin of Bordeaux canelé

      These delicious little cakes are made by the nuns of the Annonciades convent, located behind the Sainte Eulalie church in Bordeaux. The nuns collected wheat from the port, coming from the holds of boats or from torn bags, and supplied themselves with egg yolks from the wine cellars of the Quai des Chartrons, where the whites were used to clarify the wine.

      At this time, Bordeaux was a strategic trading port, facilitating the acquisition of rum and vanilla from the islands. The nuns enriched their recipe by adding these ingredients to enhance the flavor of the "canelats", today known as "canelés".

      Unfortunately, in 1790, they were expelled from their convent, leading to the disappearance of the canelats.

      The Dijeaux Gate in Bordeaux

      As you head towards their boutique La Toque Cuivrée , you won't fail to see the Porte Dijeaux , one of the six gates of Bordeaux, marking the entrance to the city center. In the 13th century, during the medieval period, these gates were crucial elements of the city's fortifications, reinforcing the walls of Bordeaux to protect the city against possible external attacks. Subsequently, the gate was destroyed before being rebuilt in the 18th century.

      The current Porte Dijeaux results from a reconstruction ordered by Tourny, intendant of Guyenne, renowned for his numerous embellishment projects in the 18th century. Built in 1748 by the architect André Portier and decorated with sculptures by Francin, the Porte Dijeaux obtained the status of "historic monument" in 1921.

      Canelé or fluted: what spelling?

      The history of Bordeaux canelé dates back to Gascon, the language historically used in Bordeaux until the 20th century, where the term "Canelat" was frequently used with a single occurrence of the "n", a spelling that we preserved until their days. We therefore write “canelé” and not “cannelé”!

      Their advice for succulent canelés!

      To prolong the freshness of their pastries, it is essential to keep the canelés in the refrigerator for a maximum of three days . To preserve their crunch, it is also recommended to carry out additional cooking. To do this, reheat the canelés in the oven at 220°C for approximately three minutes.

    They are very delicious! It’s crispy outside and tender inside, three sizes for choice! I can’t stop eating them during my short visiting in Bordeaux, there are many shops selling Canelé in the town, but I definitely recommend this one!

    Must must must try ! These little cakes are delicious and freshly made. Avoid the other chain stores that packages them up and are overpriced. This is the real deal, a local delicacy.
