    • Discover Le Cercle de Montaigne: The Excellence of Sharing and Gastronomy

At the heart of the Palais Gallien Hotel & Spa*** in Bordeaux, a new gastronomic era is dawning with Le Cercle de Montaigne. Formerly La Table de Montaigne, this exceptional restaurant reinvents the art of French cuisine with a focus on conviviality and boldness. Led by the talent of Chef David Boyer, Meilleur Ouvrier de France, this intimate and refined venue celebrates the pleasure of sharing exceptional dishes in an elegant setting inspired by the private clubs of the 1940s.

      Authentic Cuisine by David Boyer

Having worked alongside some of the greatest figures in gastronomy (Anne-Sophie Pic, Ledoyen, Taillevent), David Boyer offers a menu that combines generosity and creativity. Between tradition and modernity, each dish is an ode to the flavors of French terroir, enhanced by contemporary techniques:

      • The perfect egg, revisited with surprising textures.
      • Sole meunière, a classic reinterpreted with finesse.
      • The rib of beef, a symbol of sharing, cooked to exceptional standards.
      • Comté and truffle shell pasta, a comforting nod to childhood.

Each plate tells a story, that of French gastronomy in perpetual evolution.

      An Intimate and Elegant Setting

The Cercle de Montaigne's lounges combine noble materials (precious wood, black marble, leather) and subdued lighting for a cozy and sophisticated atmosphere. Forget the white tablecloths: here, the black marble tables are carefully set to combine refinement and conviviality. An ideal setting for a romantic dinner, a business lunch or a unique celebration.

      An Exceptional Cocktail Menu

To enhance the experience, Le Cercle de Montaigne offers a bold signature cocktail menu :

      • Pear & Roses, a floral and fruity alliance.
      • Basil Smash, a perfect balance between freshness and intensity.
      •  Chocolate Old Fashioned, a chocolatey take on the great classic.

A selection of refined mocktails completes the offer for those looking for an equally elegant alcohol-free alternative.

A Unique Experience Starting in May

With the arrival of sunny days, Le Cercle de Montaigne opens its gardens and rooftop around the swimming pool of the Palais Gallien. An exclusive setting where David Boyer offers a summer variation of his cuisine, designed for sharing and conviviality.

Very good cuisine, perfectly presented, with pleasant and smiling service as well as good advice. We tasted Wagyu beef for the first time, with such a unique taste, but a little too fatty for some of us. Note for dessert an exceptional tiramisu.

Very good experience, and good value for money, especially in the €50 menu. However, the cold Gougère stuffed with a sort of parmesan mayonnaise (laughing cow style) arrived as an appetizer that threw me a bit, and to be honest, worried me at first. Impeccable and friendly service.
