At the heart of the Palais Gallien Hôtel & Spa*** in Bordeaux, Le Cercle de Montaigne embodies a new vision of French gastronomy: creative, convivial, and deeply product-driven. Formerly known as , this confidential address has now established itself as a must-visit fine dining restaurant in Bordeaux, blending elegance, boldness, and a true spirit of sharing.

Nestled in the Fondaudège district, just minutes from the city center, Le Cercle de Montaigne invites guests to enjoy a refined culinary experience in an intimate setting inspired by the private clubs of the 1930s.

A Creative Gastronomic Cuisine Led by a New Generation of Chefs

At the helm of the kitchen, William, Head Chef, and Joey, Pastry Chef, form a passionate and complementary duo, driven by a love of exceptional ingredients and a deep respect for French terroir.

      William, Head Chef
A native of Bordeaux, William trained in some of the city's most iconic gastronomic institutions, including Le Gabriel and Le Pavillon des Boulevards. His experience at the St. Regis Bora Bora refined his expertise in seafood and precise cooking techniques. After taking part in the opening of , he now joins Le Cercle de Montaigne, where he elevates raw ingredients with accuracy, finesse, and high standards.

      Joey, Pastry Chef
Creative by nature, Joey discovered restaurant pastry at an early stage, quickly making it his preferred field of expression. Trained in Brittany and enriched by several gastronomic experiences in France and Melbourne, he now crafts modern desserts that play with textures, temperatures, and colors, delivering a fresh and indulgent finale to every meal.

A Committed, Local, and Authentic Table

At Le Cercle de Montaigne, the cuisine is local, precise, and sincere. The chefs prioritize French products, highlight regional producers and artisans, and offer a menu that evolves with the seasons. Each plate tells a story, that of a contemporary French gastronomy that is generous, refined, and masterfully executed.

An Elegant and Welcoming Setting in the Heart of Bordeaux

The lounges of Le Cercle de Montaigne, the Green Salon and the Red Salon, offer a warm and intimate atmosphere, combining precious woods, black marble, leather, and soft lighting. Free from white tablecloths, the black marble tables reflect a relaxed elegance, ideal for a business lunch, a romantic dinner, or a gastronomic moment with friends.

In the dining room, Julien and his team welcome guests with professionalism, attentiveness, and natural ease, delivering a level of service worthy of the finest establishments.

Absolutely fantastic. A five-course tasting menu (plus cheese) for two people, very affordable in terms of quality, perfect for treating yourself to a special moment without worrying about overly specific combinations or flavors. The maître d'hôtel was very welcoming, offered excellent advice (the perfect wine pairing), and was supported by a top-notch reception and service team. I'll definitely be back.

Beautiful setting. Perfect welcome. Excellent cuisine and service. A special thank you to the chef for adapting the tasting menu to my gluten intolerance. No trip to the emergency room 🙃 I highly recommend it.

Superb food! All courses exceeded expectationd and the pepper crusted steak was very tender and perfectly cooked. The small size of the restaurant slso makes it a very cosy but elegaant setting
