The chef works daily with wild-caught fish sourced directly from the port of Arcachon —pollock, meagre, John Dory, sea bream, monkfish, sole, turbot—respecting the season and the catch. Oysters from Cap-Ferret and the Médoc join shellfish and seafood (whelks, clams, razor clams, langoustines, shrimp) to create generous seafood platters regularly cited by visitors as some of the best in town. As for wine, the restaurant partners with the Bordeaux wine merchant LC Vins to offer a selection at accessible prices, including excellent white wines, ideal for pairing with seafood (Sancerre, Petit Chablis, Entre-deux-Mers).
