Michelin-starred gourmet restaurant in the heart of the Sauternes vineyards
In the village of Sauternes, opposite the vineyards of Château Guiraud, a Premier Grand Cru Classé since 1855, Le Cercle Guiraud earned its first Michelin star in March 2026, just two and a half years after opening. Rapid, but well-deserved, recognition for an establishment that has become the leading gastronomic destination in the South Gironde region.
At the helm is Chef Yoann Amado, formerly of L'Epicure at Le Bristol in Paris and La Tour d'Argent, who offers a precise and indulgent cuisine, inspired by the seasons and the rich terroir of the Aquitaine region. Foie gras, truffles, squab grilled over vine shoots, mackerel with Sauternes, lobster seared over embers: the produce of southern Gironde and the harvest from the Château's organic kitchen garden form the heart of each dish. A touch of Asian lightness occasionally surfaces—ginger, ponzu, cherry blossom vinegar—to enhance the balance without ever disrupting it. Alongside him, pastry chef Juliette Bonnard creates remarkably fresh desserts, balancing controlled acidity, light textures, and just the right amount of sweetness.
Sauternes, a full-fledged partner
At Cercle Guiraud, wine doesn't just accompany the cuisine; it permeates it. The wine list, curated by Meilleur Ouvrier de France Sommelier Denis Verneau, celebrates the Sauternes appellation in all its richness. It features Château Guiraud wines spanning several decades, as well as Climens, d'Yquem, Suduiraut, Rieussec, and Lafaurie-Peyraguey. The " Château Guiraud Trilogies," " A Terroir, Three Wines," and " If Time Could Tell a Story " allow guests to follow the estate's four flagship wines throughout the meal. Even more unexpected are some pairings that reinterpret sweet wines with savory dishes : squab with devil sauce, roasted sweetbreads, mackerel; and Sauternes even becomes an ingredient in the dishes themselves.
A responsible, gourmet cuisine, rooted in its territory
A member of the Terres de Natures label, Le Cercle Guiraud cultivates a culinary elegance that extends the estate's commitment. Short supply chains with artisans from the South Gironde, vegetables and herbs from Château Guiraud's organic kitchen garden, composting of plant waste reintroduced into the soil: the approach is circular, discreet, and sincere.
Between the large shaded terrace under the mulberry-plane trees and the room with its country chic style, the restaurant offers the atmosphere of fine dining where time is taken; and where the chef comes to meet his guests.
Several options are available, from the Sauternes Menu (starting at €49) to the Grand Cercle Menu in 4 or 6 courses for a complete immersion. Located a few kilometers from Château d'Yquem, in the heart of the village of Sauternes, Le Cercle Guiraud is a natural stop on the Sauternes and Graves Wine Route.
